Vinification and Maturation:
- Drying Process: Selected bunches undergo appassimento for 60-90 days in a controlled environment
- Fermentation: After drying, fermentation occurs
- Aging: Aged for at least 2 years in large oak barrels (25 Hl), followed by settlement in steel tanks and 3 months of bottle refinement
- Residual Sugar: Approximately 8 g/L
